Red Chili

Red Chili
1 tsp. oil
1 large onion chopped
1 green bell pepper seeded and chopped
1 to 2 stalks celery chopped
2 to 4 cloves cloves garlic minced
2 lb. lean ground beef
2 lb. pork diced
1 (14.5- oz.) can stewed tomatoes
1 (12- oz.) bottle chili sauce
1 cup water
1 cup beer
1/2 cup chili powder
1/3 cup tomato paste
1 (4- oz.) can diced green chiles
1 tbsp. ground cumin
4 tsp. Better than Bouillon Beef Flavor Concentrate
1/2 tsp. oregano
Prep time: 20 minutes,
Cook time: 1 hour 15 minutes

Heat oil in a large pot. Add onion, bell pepper, celery and
garlic; saute for 5 minutes. Add beef and pork; cook until
browned. Add remaining ingredients and simmer for 1 hour or
until pork is tender. Remove from heat and let cool
slightly. Refrigerate overnight, if possible, and skim fat
from surface. If consistency is too thin, add cornmeal to

Wine Suggestion
Malbec - This hearty chili calls for a hearty red wine like this ripe Argentine choice. You could also pair with Shiraz or Zin.
