Avocado Mango Bruschetta
Avocado Mango Bruschetta
Ingredients
18 ciabatta dinner rolls or baguette slices
2 tbsp. extra virgin olive oil, divided
1 ripe but firm avocado, peeled, pitted and diced
1 cup diced fresh mango
1/4 cup chopped red bell pepper
2 tbsp. snipped fresh basil
1 tbsp. lime juice
Freshly ground salt and pepper to taste
Directions

Prep: 15 minutes, Cook: 5 to 10 minutes, Makes: 18 appetizers

1. Preheat oven to 400ºF. Place bread slices on a baking sheet and brush with 1 tbsp. olive oil.

2. Bake for 5 to 10 minutes to lightly toast. In a large bowl, lightly stir together remaining oil with all remaining ingredients, being careful not to mash avocado.

3. Serve with toasted bread slices.
