Herbed Snap Peas
Herbed Snap Peas
1 1/2 cups snap peas
1/2 tbsp. butter
1/2 cup bite-size red bell pepper strips
1 tsp. herbes de Provence
Salt and pepper to taste
Blanch peas in boiling water for 2 minutes; drain well. Melt butter in a medium skillet over medium-high heat. Add peas, bell pepper strips and herbes de Provence. Sauté for 2 minutes, then season to taste with salt and pepper.

Makes 2 servings.
