Parmesan Pesto Potato Soup
Parmesan Pesto Potato Soup
Ingredients
6 cups peeled and cubed Raley's Russet Potatoes
1 (32- oz.) container chicken or vegetable stock
1 cup shredded Parmesan cheese
1/2 cup fat-free half & half
1/2 tbsp. of basil pesto per bowl
Directions
Prep time: 5 minutes, Cook time: 15 minutes

Stir together potatoes, stock and half & half in a medium
saucepan and bring to a boil. Reduce heat and simmer for 5
minutes, stirring occasionally. Stir in Parmesan cheese and
simmer for 5 minutes more; season to taste with salt and
pepper.
Ladle into bowls and swirl 1 tsp. of pesto into each bowl.

Makes 4 small or 2 large servings. Recipe may be doubled.
