Southern Blackeye Pea Soup
Southern Blackeye Pea Soup
2 (15- oz.) cans Glory Seasoned Blackeye Peas
1 (32- oz.) container vegetable stock
1 (14.5- oz.) can S&W Ready Cut Diced Tomatoes with Roasted Garlic
2 cups Raley's Fresh Produce Mirepoix Vegetable Mix
2 to 3 tsp. Creole (or Cajun) seasoning
Several drops liquid smoke (optional)
1 cup Glory Seasoned Mixed Greens
Prep time: 5 minutes, Cook time: 25 minutes

Combine all ingredients except greens in a large pot and bring to a boil. Reduce heat and simmer, covered, for 25 minutes; stir in greens.

Makes 6 servings.

Tip! Add small chunks of ham for a heartier soup.

Great soup! Very flavorful and hardy - excellent Winter soup! Will definitely make again. Did not add ham (trying to be healthy) and did not add liquid smoke. Served in February 2009.
