Tomato and Bread Soup
Tomato and Bread Soup
3 tbsp. extra virgin olive oil
1/2 cup chopped onion
1 (32- oz.) container chicken stock
1 (28- oz.) can crushed tomatoes
2 cups cubed, toasted rustic bread from our Bakery (Do not use sourdough bread, as it makes the flavor too tart.)
2 tsp. basil
Garlic salt and freshly ground pepper to taste
Prep time: 5 minutes, Cook time: 25 minutes

Heat oil in a large saucepan; add onion and cook for 5 minutes to lightly brown. Stir in
remaining ingredients. Bring to a boil; reduce heat and simmer, covered, for 20 minutes. Let cool slightly, then puree in a blender or food processor until smooth. Serve with shredded Parmesan cheese, if desired.

Makes 4 servings.
