1/2 cup key lime juice
1/2 cup brown sugar
2 tbsp. rum
2 (8- oz.) ham steaks
Stir together juice, sugar and rum in a large skillet. Score steaks in a diamond pattern and add to skillet. Simmer, uncovered, for 5 minutes. Turn ham and cook for 5 minutes more.

Makes 4 servings.
