Smashed Blueberry, Bacon and Brussels Sprouts Salad

Smashed Blueberry, Bacon and Brussels Sprouts Salad
Ingredients
2 tbsp. extra virgin olive oil
2 tbsp. sherry vinegar
1/2 tsp. sugar
1/2 tsp. sea salt
Freshly ground pepper to taste
1 cup fresh blueberries
4 cups very thinly sliced Brussels sprouts
1/4 cup diced red onion
2 tbsp. dried blueberries
4 strips thick cut bacon, cooked crisp and crumbled
Directions

Prep: 20 minutes, Serves: 4

1. Stir together oil, vinegar, sugar, salt and pepper in a large bowl. Add fresh blueberries and mash very lightly with a fork.

2. Stir in remaining ingredients and toss well to coat. May be served cold or at room temperature.

I am so glad I decided to try this recipe. Until this recipe, Brussels Sprout was my very least liked vegetable. I have been sharing this recipe with lots of people giving Raley's credit. Thank you for putting interesting recipes in your magazine.
