Salmon and Bacon Sandwich with Honey Mustard

Salmon and Bacon Sandwich with Honey Mustard
Ingredients
1 tbsp. peanut oil
2 (3- oz.) king salmon fillets, skin removed
Salt and pepper to taste
2 tbsp. Dijon mustard
1 tsp. honey
2 tbsp. mayonnaise
4 slices country style bread
1 cup arugula
4 slices cooked bacon
4 slices tomato
Directions

Prep: 5 minutes, Cook: 10 minutes, Serves: 2

1. Heat peanut oil in a large skillet; season salmon with salt and pepper, then cook for 5 minutes on each side.

2. Mix Dijon and honey in a small bowl. Spread mayonnaise and honey mustard mixture on one side of bread. Top with arugula, bacon, cooked salmon and tomato.
