Fiesta Rice and Vegetable Bake
2 cups Imagine Low Sodium Organic Vegetable Broth
1 cup Lundberg Family Farms Long Grain Brown Rice
1 (16- oz.) jar Green Mountain Gringo Medium Salsa
1 (15- oz.) can Eden Organic Black Beans rinsed and drained
1 1/2 cups broccoli florets thawed in microwave according to package directions
1 tbsp. Hain Taco Seasoning Mix (from a 1.20- oz. package)
1 cup Organic Valley Mexican Blend Shredded Cheese
For a more substantial meal, add cubes of leftover chicken before baking.

Prep time: 10 minutes, Cook time: 1 hour 15 minutes

Preheat oven to 350°F and spray a 9-inch baking dish with nonstick cooking spray. Combine broth and rice in a saucepan and bring to a boil. Reduce heat and simmer, covered, for 50 minutes. Stir together cooked rice and all remaining ingredients except cheese; spoon into prepared dish and top with cheese. Bake for 20 minutes or until heated through and cheese is melted.

Makes 4 to 6 servings.
