Cucumber, Chive and Goat Cheese Salad
1/2 small English cucumber sliced
2 oz. goat cheese crumbled
1 tbsp. chives snipped
1 tbsp. top-quality olive oil
1 tbsp. fresh lemon juice
Freshly ground sea salt and pepper
Prep time: 10 minutes

Divide cucumber slices, goat cheese and chives equally between two plates. In a small bowl, whisk together oil and juice; season to taste with salt and pepper. Pour over salad and serve.

Makes 2 servings.
