Springtime Vegetable Kugel
Springtime Vegetable Kugel
1/2 tbsp. olive oil
3 medium carrots, peeled and diced
3 medium zucchini, diced
1 red pepper, stemmed, seeded and diced
2 cups sliced mushrooms
2 cloves garlic, minced
3 eggs
1/4 cup matzo meal
1 tbsp. chopped fresh dill (or 1 tsp. dried)
1/4 tsp. salt or to taste
freshly ground pepper to taste

Prep: 15 minutes, Cook: 20 minutes, Serves: 6

Preheat oven to 350°F and spray a 9-inch square baking dish with nonstick cooking spray. Heat oil in a large skillet over medium-high heat; add carrots and cook, stirring frequently, for about 5 minutes. Add zucchini, red pepper, mushrooms and garlic; continue cooking and stirring for another 5 minutes or until vegetables are tender. Whisk together remaining ingredients in a medium bowl; stir in vegetables and transfer into prepared dish. Bake for 20 minutes or until kugel is firmly set.
