Savory Irish Potato Gratin
Savory Irish Potato Gratin
Ingredients
4 lb. russet potatoes peeled and sliced
1/4 cup butter
2 large leeks washed and thinly sliced (white and pale green parts only)
1/4 cup flour
2 cups milk
2 cups chicken broth
2 tbsp. Maille Grained Mustard
2 tsp. thyme
2 (7- oz.) packages Kerrygold Aged Cheddar
Cheese, shredded (in our Deli)
Freshly ground pepper to taste
Directions
Prep time: 20 minutes,
Cook time: about 1 hour

Preheat oven to 375°F and spray a 13-by- 9-inch
baking dish with nonstick cooking spray. Place
potatoes in a large pot fitted with a steamer
basket; steam for 10 minutes or until tender, but
still firm. Remove from steamer and set aside.
Melt butter in a medium saucepan. Add leeks and
cook, stirring frequently, for 5 minutes. Add flour
and cook for 2 minutes more. Stir in milk and broth
and bring to a boil. Reduce heat and simmer until
slightly thickened. Remove from heat and stir in
mustard and thyme. Add cheese, a handful at a
time, stirring well until melted. Season with
pepper, then place half the potatoes in the bottom
of prepared dish and top with half the sauce.
Repeat layers. (May be covered and refrigerated
at this point.) Bake for 30 to 40 minutes or until
potatoes are golden brown on top. Let stand for 5
minutes before serving.

Makes 8 to 10 servings.

Tip! Gratin may be assembled one day ahead and
refrigerated. Simply bake before serving.
