Italian Scampi

Italian Scampi
1/4 cup butter
3 tbsp. fresh fennel (white base only) minced
3 large cloves garlic minced
1 lb. shrimp peeled and deveined
1/4 cup white wine
2 tbsp. fresh lemon juice
Hot cooked Nob Hill Trading Co. Pasta
Garnish with chopped fennel tops and basil for a little added flavor.

Prep time: 10 minutes, Cook time: 15 minutes

Melt butter in a medium skillet. Add fennel and garlic; cook over low heat for 8 minutes, stirring frequently. Increase heat to medium and add shrimp to skillet. Cook, stirring constantly, for 5 minutes more. Stir in wine and lemon juice and cook for 2 minutes more or until shrimp is pink. Serve over pasta.

Makes 4 servings.
