Potato Crusted Ham Quiche

Potato Crusted Ham Quiche
1 (20 oz.) bag Simply Potatoes Shredded Hash Browns
2 cups Raley's Shredded Sharp Cheddar Cheese divided
1 tbsp. flour
1/4 tsp. salt
1/4 tsp. pepper
4 eggs divided
1 cup fat-free half & half
1 cup ham diced
1/4 cup green onions sliced
1/4 cup red bell pepper chopped
Salt and pepper to taste
Salsa (optional)

Preheat oven to 400°F. Mix hash browns, 1 cup cheese, flour, 1/4 tsp.
salt, 1/4 tsp. pepper and 1 egg in a medium bowl; press firmly into a
buttered 9-inch pie plate. Mix together remaining ingredients except
salsa. Pour over potato crust and bake for 30 to 35 minutes. Serve
with salsa if you like.

Makes 6 to 8 servings.

I precooked the hash browns according to the package. they turned out nice and crispy, I don't like soggy hash browns.
