Tomato Polenta

Tomato Polenta
1 1/2 cups chicken stock or reduced-sodium broth
1/3 cup instant polenta
1 tbsp. sun dried toma to pesto or paste
1 clove fresh garlic chopped
Salt and pepper to taste
Heat stock in a small saucepan. Stir in polenta, pesto and garlic. Cook and stir for 5 minutes over low heat. Season to taste with salt and pepper.

Makes 2 servings.
