Ingredients
Crust:
1 cup flour
3/4 cup finely chopped walnuts, toasted
1/3 cup cold organic butter
1/3 cup organic sugar
1 egg yolk
2 to 3 tbsp. ice water
Filling:
1 cup Organic Valley Whipping Cream
2 tbsp. organic sugar
1/2 tsp. organic almond extract (in our Natural Foods Dept.)
2 cups fresh organic raspberries
1/2 cup fresh organic blueberries
1/3 cup Cascadian Farm Organic Blackberry Fruit Spread
Directions

Prep: 30 minutes, Cook: 10 to 12 minutes, Serves: 8

Preheat oven to 400°F and line a baking sheet with parchment paper. To prepare crust, mix together flour, walnuts, butter and sugar with a pastry blender. In a small bowl, stir together egg yolk and water with a fork; stir into flour mixture until blended. Press into 8 (4-inch) circles on prepared baking sheet, forming a small rim around the edges. Bake for 10 to 12 minutes or until lightly browned; remove from oven and let cool. To prepare filling, beat cream, sugar and extract with an electric mixer until stiff peaks form. Carefully fold together berries and fruit spread; spoon onto prepared crusts. Top each with a dollop of whipped cream. (Crust may be made several hours ahead and topped with fruit and whipped cream at the last minute.)
