Corned Beef and Cabbage Tacos

Corned Beef and Cabbage Tacos
1 corned beef brisket (including seasoning packet)
12 flour or corn tortillas or crisp taco shells warmed
3 cups cabbage or lettuce shredded
1 1/2 cups Kerrygold Aged Cheddar Cheese (in our Deli) shredded
Sliced green onions, diced tomatoes, taco sauce (optional)
Prep time: 20 minutes, Cook time: at least 2 hours
(for stovetop method), Makes: about 12 tacos

Cook brisket according to package directions, or cover with water in a slow cooker and cook on HIGH for 8 to 10 hours. Remove from liquid and let stand until cool enough to handle. Remove any pieces of fat and shred corned beef. To assemble tacos, fill tortillas or shells with shredded corned beef, cabbage and cheese. Top with other ingredients as desired.

This is great. It's healthy, looks delicious, and it fits the holiday I created. "St. Paddy de Mayo" day. It falls on the second friday in April and it celebrates both the Irish and Mexican cultures. Check us out on facebook:

I'm Irish on both sides - tried this as something new, and it was awesome. Kids, hubby and friends love it. It's our new age Irish tradition each St. Patrick's day...
