Meat and Potato Salad
4 cups mixed baby greens divided
20 ripe olives divided
16 small cooked, baby new potatoes divided cooled and halved cooled, halved and divided
16 tomato wedges divided
12 thin red onion rings divided
2 cups cubed roast beef divided
1/2 cup vinaigrette
4 tsp. Maille Dijon Mustard
1 1/2 tsp. fresh herbs chopped
Divide greens between 4 individual salad bowls or plates. Top each with 5 olives, 4 potatoes, 4 tomato wedges, 3 onion rings and 1/2 cup roast beef. Stir together vinaigrette, mustard and herbs; drizzle evenly over salads.

Makes 4 servings.
