Olive Oil Poached Halibut with Fresh Herbs and Citrus

Olive Oil Poached Halibut with Fresh Herbs and Citrus
Ingredients
2½ lbs. halibut fillets
2 tsp. salt
1 tsp. black pepper
3 sprigs fresh rosemary
3 sprigs fresh thyme
1 small lime, thinly sliced
1/2 orange, thinly sliced
1/2 lemon, thinly sliced
2½ cups California Olive Ranch Olive Oil
1/2 cup loose parsley leaves, chopped
Directions

Prep: 15 minutes, Cook: 1 hour, 45 minutes
Serves: 4

1. Preheat oven to 275˚F. Season halibut with salt and pepper; let stand at room temperature for 10 minutes.

2. Arrange fillets on bottom of 8x8-inch baking dish. Lay herbs and citrus pieces around fish. Pour oil over top and bake for 1 to 1½ hours.

3. Remove fish from oil to serve and garnish with parsley.
