Feta, Grapefruit and Greens Salad

Feta, Grapefruit and Greens Salad
Ingredients
2 pink grapefruit
2 tbsp. vegetable oil
4 slices prosciutto
2 cups torn kale leaves
2 cups torn radicchio
1/2 cup crumbled feta cheese
3 endives, chopped
4 tbsp. olive oil
3 tbsp. fresh lemon juice
1 shallot, minced
1 clove garlic, minced
Salt and pepper
Directions

Prep: 15 minutes, Cook: 5 minutes, Serves: 4

1. Cut peel and pith from grapefruit and discard. Cut segments from membrane over a small bowl. When all the segments are removed, squeeze membrane to extract remaining juice; set aside.

2. Heat oil in a small skillet over medium heat; add prosciutto and cook until crispy. Drain on paper towels.

3. Combine kale and radicchio, feta and endive in a large bowl. Mix together grapefruit juice, olive oil, lemon juice, shallot, garlic, salt and pepper in a small bowl. Drizzle dressing on greens and top with prosciutto and grapefruit.
