Caramelized Cauliflower and Onions with Linguine

Caramelized Cauliflower and Onions with Linguine
Ingredients
1 large head cauliflower, cut into 1-inch pieces
4 tbsp. olive oil, divided
Salt and pepper to taste
1 lb. linguine
3 cloves garlic, minced
2 medium onions, thinly sliced
1 cup chicken broth
2 tbsp. lemon juice
2 tsp. dried thyme
1 tsp. red chili flakes
1/2 cup crumbled goat cheese
3 tbsp. chopped fresh parsley
Directions

Prep: 12 minutes, Cook: about 40 minutes, Serves: 4

1. Preheat oven to 425˚F. Toss cauliflower with 2 tbsp. olive oil In a large bowl. Season with salt and pepper, then place on a baking sheet. Bake for 15 minutes or until golden brown. Remove from oven to cool.

2. While cauliflower is baking, heat a large pot of salted water and cook linguine according to package directions; drain and set aside.

3. Heat a large sauté pan on medium heat with remaining 2 tbsp. olive oil; add garlic and onions, cooking for 15 minutes or until golden brown. Add broth, lemon juice, thyme and chili flakes. Cook for 5 minutes.

4. Add cauliflower to onion mixture, then add pasta. Toss in pan and cook for 3 minutes.

5. Garnish with goat cheese and parsley.
