Bacon Wrapped Turkey Tenderloins

Bacon Wrapped Turkey Tenderloins
1 turkey tenderloin (1/2 of a 20- oz. package)
4 strips bacon
Salt and pepper to taste
1/4 cup apricot pineapple preserves
2 tbsp. tomato sauce
1 tbsp. each: soy sauce and rice vinegar (unseasoned)
Prep time: 15 minutes,
Cook time: about 15 minutes

Trim ends from turkey and cut into 4 thick slices. Wrap a bacon strip around each and secure with toothpicks. Cook in a medium skillet over medium heat for about 3 to 5 minutes on each side to sear. Using tongs, hold turkey slices on their edges to brown bacon. Stir together remaining ingredients in a small bowl
and pour over turkey; cook
for 5 minutes more.

Makes 2 servings.
