Bacon Wrapped Turkey Tenderloins

Bacon Wrapped Turkey Tenderloins
Ingredients
1 turkey tenderloin (1/2 of a 20- oz. package)
4 strips bacon
Salt and pepper to taste
1/4 cup apricot preserves
2 tbsp. tomato sauce
1 tbsp. soy sauce
1 tbsp. rice vinegar (unseasoned)
Thinly sliced green onion tops (optional)
Directions

Prep: 15 minutes,  Cook: about 15 minutes,  Serves: 2

1. Trim ends from turkey and cut into 4 thick slices. Wrap a 
bacon strip around each and secure with toothpicks. Cook in a medium skillet over medium heat for about 3 to 5 minutes on each side to sear. Using tongs, hold turkey slices on their edges to brown bacon.

2. Stir together remaining ingredients in a small bowl and pour over turkey; cook for 5 minutes more. Top with green onions, if you like.
