Fried Eggs with Roasted Pepper Sauce

Fried Eggs with Roasted Pepper Sauce
1 cup Nob Hill Trading Co. Roasted Bell Peppers
1/4 cup slivered almonds, toasted
2 tbsp. oil-packed sun dried tomatoes
1 tbsp. Raley's Red Wine Vinegar
1/4 cup fresh basil leaves lightly packed
4 slices Rustic French Bread, toasted
4 fried eggs

Prep: 15 minutes, Cook: 10 minutes, Serves: 4

1. Puree bell peppers, almonds, tomatoes and vinegar in a blender until smooth. Add basil and blend until finely chopped.

2. Transfer to a microwave-safe dish and cook on HIGH for 1 minute to warm.

3. Spoon mixture over toasted bread slices and top with fried eggs.
