Marinated Carrots

Marinated Carrots
1/2 lb. carrots peeled and cut in to 1/4 -inch thick diagonal slices
1/2 cup sherry vinegar
1/4 cup each: lemon juice and Filippo Berio Extra Virgin Olive Oil
2 tbsp. fresh oregano chopped
2 tsp. sugar
1 tsp. La Baleine Sea Salt
1/4 to 1/2 tsp. red pepper crushed
4 cloves garlic minced
Prep: 10 minutes Cook: 1 minute Makes: 8 to 10 tapas servings
Refrigerate: at least 1 hour
1. Cook carrots for 1 minute in a pot of boiling water. Pour into a colander and rinse with cold water; drain well.
2. Mix together remaining ingredients in a quart-size resealable plastic bag; add carrots and seal well. Refrigerate for at least 1 hour, turning bag occasionally. Serve on toothpicks.
