Asparagus, Pepper and Prosciutto Roll-Ups
Asparagus, Pepper and Prosciutto Roll-Ups
9 asparagus spears, trimmed to 4 inches
1 (4- oz.) package prosciutto
9 (1/4 x 4-inch) strips roasted bell peppers, drained on paper towels

Prep: 15 minutes, Cook: 11 minutes, Makes: 9

1. Cook asparagus in boiling water for 1 minute; remove and drain well.

2. Line a baking sheet with foil and preheat broiler. Carefully separate prosciutto slices.

3. Place 1 asparagus spear and 1 pepper strip at the short end of each piece of prosciutto. Roll up tightly to enclose, squeezing gently to seal.

4. Place on prepared baking sheet and broil 3 to 4 inches from heat for about 10 minutes or until prosciutto is golden brown, turning frequently. Serve warm.
