Dilled Macaroni Salad
Ingredients
1/2 lb. small elbow macaroni
1/2 cup each: red and green bell pepper diced
1/2 cup red onion minced
1/2 cup light mayonnaise
1/2 cup fat-free plain yogurt
1 (7.5- oz.) jar marinated artichoke hearts, (do not drain) chopped
3 tbsp. fresh dill chopped
3 cloves garlic minced
1/2 tsp. salt
1/4 tsp. pepper
Directions
Prep time: 20 minutes, Cook time: about 10 minutes,
Chill time: several hours

Cook macaroni according to package directions until al dente. Drain and rinse with cold water; drain well again. Add to a large bowl with bell peppers and onion. In a small bowl, whisk together mayonnaise, yogurt, artichoke hearts (including liquid), dill, garlic, salt and pepper. Pour over pasta mixture and stir well. Cover and chill for several hours.

Makes 8 servings. Recipe may be doubled.
