Miso Rice Salad

Miso Rice Salad
3 1/4 cups water
1 (14- oz.) box Uncle Ben’s Fast & Natural Whole Grain Instant Brown Rice
1 (10- oz.) bottle Asian salad dressing
3 cups fresh spinach coarsely chopped
1 cup red bell pepper diced
1/2 cup green onions sliced
1/2 cup slivered almonds toasted (optional)
Prep time: 15 minutes, Cook time: 10 minutes,
Chill time: 1 to 2 hours

Bring water and rice to a boil in a medium saucepan; reduce heat and simmer, covered, for 10 minutes. Remove from heat and let stand for 5 minutes. Transfer to a large bowl and fluff with a fork; let cool. Stir in dressing, then remaining ingredients except almonds. Top with almonds, if desired. Cover and chill for at least 1 to 2 hours.

Makes 8 to 10 servings.
