Roasted Pepper Potato Salad

Roasted Pepper Potato Salad
3 lb. red, white and purple potatoes
1/2 cup Nob Hill Trading Co. Roasted Bell Peppers chopped
1/3 cup green onions sliced
1/3 cup Filippo Berio Extra Virgin Olive Oil
1/4 cup white balsamic vinegar
1 tsp. garlic salt
pepper to taste reshly ground
Prep time: 15 minutes,
Cook time: 20 to 25 minutes,
Chill time: Several hours

Cut potatoes into 1-inch cubes and place in a large pot fitted with a steamer basket; steam for 20 to 25 minutes or until potatoes are tender when pierced. Let cool, then place in a large bowl with peppers and green onions. Whisk together all dressing ingredients in a small bowl and pour over potatoes. Toss well to coat and season to taste with pepper. Cover and chill for several hours, stirring occasionally.

Makes 8 servings. Recipe may be doubled.
