Guajillo Caesar Salad

Guajillo Caesar Salad
1 cup water
2 dried guajillo peppers stems and seeds removed
2/3 cup light Caesar salad dressing
12 hearts of romaine leaves
16 large cooked shrimp chilled
1/2 cup Parmesan cheese shredded
Prep time: 15 minutes, Cook time: 10 minutes

Bring water and peppers to a boil in a small saucepan; simmer over low heat for 10 minutes. Drain and reserve liquid. Rinse peppers in cold water to cool, then place in a blender with dressing; puree until smooth. Divide romaine leaves between 4 salad bowls. Top with shrimp and drizzle with dressing; sprinkle with cheese.
