Classic Refried Beans
Classic Refried Beans
1 (30- oz.) can Teasdale Pinto Beans rinsed and drained
4 slices bacon
1 tbsp. bacon grease
3/4 cup chopped onion
2 cloves garlic minced
1/4 to 1/2 cup chicken broth
Salt and pepper to taste
Mash beans; set aside. Cook bacon in a medium skillet until very crisp; remove bacon and drain on paper towels. Pour fat out of skillet, reserving 1 tbsp. Add onion and garlic to skillet; cook over low heat for 10 minutes, stirring frequently. Pour reserved bacon grease into skillet; add beans and bacon. Cook and stir for a few minutes, stirring in broth. Season to taste with salt and pepper; garnish with sliced green onions, if desired.

Makes 6 to 8 servings.
