Corn, Bacon and Tomato Salad with Wine Country Vinaigrette
Ingredients
Vinaigrette:
3 tbsp. white wine
3 tbsp. Filippo Berio Extra Virgin Olive Oil
2 tbsp. white wine vinegar
1 tbsp. fresh basil chopped
1 clove garlic minced
Salt and pepper to taste
Salad:
1 cup cooked, chilled fresh corn
1 cup grape tomatoes halved
1/3 cup red onion slivered
8 cups mixed greens
6 strips bacon cooked crisp and crumbled
1 avocado peeled, pitted and cubed
sea salt and pepper to taste freshly ground
1/2 cup Sunkist Oven Roasted Almond Accents
Directions
Prep time: 20 minutes, Chill time: 30 minutes

To prepare vinaigrette, whisk together all
ingredients; let chill for 30 minutes. Stir corn,
tomatoes and onion into vinaigrette; add to bowl
with greens, bacon and avocado. Toss well to coat
all ingredients with vinaigrette. Season to taste
with salt and pepper, then top with Almond
Accents.

Makes 6 to 8 servings.

Served on 7/19/09 with Schwilsons. Excellent salad! Forgot the avocado but still was delish. Did not mix together with dressing so it wouldn't get soggy.
