Creamed Style Corn
2 tbsp. butter
3 1/2 cups fresh corn kernels (about 5 to 6 ears husked corn)
1 tbsp. flour
1 tsp. sugar
1/2 tsp. salt
1 1/2 cups milk
4 oz. cream cheese cubed
Salt and pepper to taste freshly ground
Tabasco Sauce (optional)
Prep time: 15 minutes, Cook time: about 20 minutes

Melt butter in a large skillet over medium heat. Add corn and sauté for about 5 minutes, stirring occasionally. Sprinkle with flour, sugar and salt; cook and stir for 1 minute. Add milk and continue to cook for another 5 minutes or until slightly thickened, stirring occasionally. Stir in cream cheese; cook for a few minutes more, stirring constantly, until cheese is melted and mixture is hot and bubbly. Season to taste with salt, pepper and Tabasco Sauce, if desired.

Makes 6 servings.

I use fat-free half and half instead of regular milk and a bit more cream cheese and butter. Always a crowd pleaser! Delicious!!
