Beefsteak Tomatoes Stuffed with Orzo and Arugula
Ingredients
1/2 cup orzo (rice-shaped pasta)
2 cups arugula coarsely chopped
1/4 cup Kozlowski Farms Zesty Herb Fat Free Dressing
2 tbsp. red onion minced
1 tbsp. real bacon bits (optional)
2 large beefsteak tomatoes
Directions
Prep time: 10 minutes,
Cook time: 10 minutes

Cook orzo in boiling salted water for 10 minutes or until al dente; drain and let cool. Stir in arugula, dressing, onion and bacon. Slice off the top third of each tomato and scoop out seeds with a small spoon. Fill tomatoes with orzo mixture.

Makes 2 servings.
