Pecos Pintos

Pecos Pintos
1 (29- oz.) can pinto beans rinsed and drained
1 cup onions chopped
1 cup smoked ham or beef diced
1 (4- oz.) can green chiles diced
2 tbsp. Stubb’s Bar-B-Q Spice Rub
Salt and pepper to taste
fresh cilantro for garnish chopped
Stir together beans, onions, ham, chiles and rub in a medium saucepan. Bring to a boil; reduce heat and simmer, covered, for 30 minutes; season to taste with salt, pepper and chopped fresh cilantro.

Makes 8 servings.
