Marinated Artichoke, Roasted Pepper and Barley Salad

Marinated Artichoke, Roasted Pepper and Barley Salad
1 cup barley (bulk bin #744)
2/3 cup Annie’s Naturals Organic Green Garlic Dressing
1/2 cup Nob Hill Trading Co. Roasted Bell Peppers coarsely chopped
1/4 cup red onion minced
1 (6.5- oz.) jar marinated artichoke hearts (reserve marinade) coarsely chopped
3 tbsp. chopped fresh basil chopped
Salt and pepper to taste freshly ground
1/4 cup pine nuts, (bulk bin #645) toasted
Prep time: 15 minutes,
Cook time: 30 minutes,
Chill time: at least 1 hour

Place barley in a medium saucepan; add water to 2 inches above barley. Bring to a boil; reduce heat and simmer for 30 minutes or until barley is tender. Drain in a colander and rinse with cold water. Place in a medium bowl with reserved marinade and stir in remaining ingredients except pine nuts. Cover and chill for at least 1 hour, stirring occasionally. Top with pine nuts just before serving.
