Grilled Chicken with Sweet Cherry Sauce
Grilled Chicken with Sweet Cherry Sauce
2 cups pitted cherries, quartered
1½ cups pitted cherries, pureed
1/2 cup Madeira wine or dry sherry
1 tbsp. honey
1 tsp. grated lemon zest
1/4 tsp. cinnamon
1/8 tsp. cloves
4 Raley's Split Chicken Breasts or 6 Raley's Boneless, Skinless Chicken Breasts
1 tsp. fresh thyme
Freshly ground sea salt to taste
Freshly ground pepper to taste

Prep: 20 minutes, Cook: 15 to 20 minutes, Serves: 6

1. Stir together cherries, cherry puree, Madeira, honey, lemon zest, cinnamon and cloves in a small saucepan and bring to a boil. Reduce heat and simmer, uncovered, for 5 to 10 minutes; set aside.

2. Rinse chicken and pat dry. Season with thyme, salt and pepper. Grill over medium heat for about 5 minutes on each side or until cooked through. Serve with warm cherry sauce.
