Sweet Jammy Coconut Cakes
Sweet Jammy Coconut Cakes
1 (16.3- oz.) box Cherrybrook Kitchen Yellow Cake Mix
1 1/4 cup Let's Do...Organic Unsweetened Coconut divided
1/2 cup Walls Berry Farm Organic Blackberry Preserves divided
1 (9.4- oz.) box Cherrybrook Kitchen Vanilla Frosting Mix
Prep time: 15 minutes, Cook time: 18 minutes

Preheat oven to 350°F and line 2 cupcake tins with paper liners. Prepare cake mix according to package directions. Stir 1/2 cup coconut into prepared cake batter. Fill cake tins half full with batter. Spoon about 1/2 tsp.preserves into center of each and top with remaining batter. Bake for 18 minutes or until toothpick inserted into the center comes out clean. Meanwhile, prepare frosting according to package directions. When cool, frost each cupcake with about 1 tbsp. prepared frosting and sprinkle tops with remaining coconut. (Save any leftover frosting for another use. May be frozen for up to 2 weeks.)

Makes 24 cupcakes.
