Sweet Jammy Coconut Cakes

Sweet Jammy Coconut Cakes
1 (16.3- oz.) box Raley’s Yellow Cake Mix
1 1/4 cup unsweetened shredded coconut, divided
1/2 cup blackberry preserves, divided
1 (15 oz. to 16 oz.) vanilla frosting mix
Prep: 15 minutes, Cook: 18 minutes, Makes: 24 cupcakes

1. Preheat oven to 350°F and line 2 cupcake tins with paper liners.

2. Prepare cake mix according to package directions. Stir 1/2 cup coconut
into prepared cake batter.

3. Fill cupcake cups half full with batter. Spoon about 1/2 tsp.preserves
into center of each and top with remaining batter.

4. Bake for 18 minutes or until a toothpick inserted into the center comes
out clean. Meanwhile, prepare frosting according to package directions.

5. When cool, frost each cupcake with about 1 tbsp. frosting and
sprinkle tops with remaining coconut. (Save any leftover frosting for
another use. May be frozen for up to 2 weeks.)
