Pumpkin Ginger Bars

Pumpkin Ginger Bars
1/2 cup butter softened
3/4 cup brown sugar
3/4 cup canned pumpkin
1 tbsp. Christopher Ranch Chopped Ginger
1/2 tsp. imitation maple flavor
1/2 cup chopped crystallized ginger (optional)
1 cup flour
1 tsp. ground ginger
1/2 tsp. baking soda
1/4 tsp. salt
Prep time: 10 minutes, Cook time: 20 minutes, Makes: 12 bars

Preheat oven to 350°F and spray a 9-by-9-inch baking pan with nonstick cooking spray. Cream together butter and sugar; beat in pumpkin, ginger and maple flavor. Stir in remaining ingredients and pour into prepared pan. Bake for 20 minutes or until toothpick inserted into the center comes out clean. Cool on a wire rack and cut into 12 squares.

Made these several times. Having problems with the cook time being too short, but still LOVE the taste. Continuing to try so I can figure out what I'm doing wrong. I'm thinking it HAS to be a 9x9 and no variation... We'll see. EVERYONE likes them regardless, even folks who aren't fans of ginger. Enjoy
