Pesto Chicken Grill
Pesto Chicken Grill
4 small Foster Farms boneless skinless chicken breasts (about 1 lb.)
Salt and pepper to taste
1/2 cup fat-free balsamic vinaigrette
1 (.50- oz.) package McCormick Pes to Sauce Mix
8 small tomato slices
4 tsp. DiGiorno Grated Parmesan Cheese
Prep time: 10 minutes, Marinate time: several hours, Cook time: 15 minutes

Rinse chicken and pat dry; pound to flatten slightly and place in a shallow baking dish. Whisk together vinaigrette and pesto sauce mix; pour 3/4 of mixture over chicken. Cover chicken and reserved marinade; refrigerate for several hours. Cook chicken on a well-oiled grill over medium heat for about 5 minutes on each side. Transfer chicken to a piece of foil and top each piece with 2 tomato slices. Drizzle with reserved marinade and sprinkle each with 1 tsp. cheese; grill for 5 minutes more. Serve over pasta with additional cheese, if desired.
