Sausage and Bean Stew
Sausage and Bean Stew
Ingredients
1 (19.5- oz.) package sweet or hot Italian turkey sausage
1 large onion peeled and chopped
3/4 cup fennel thinly sliced and chopped
1 (14.5- oz.) can tomatoes with basil, garlic and oregano diced
2 tsp. Italian herb seasoning
3 (15- oz.) cans small white beans drained
Parmesan cheese (optional) shaved or freshly grated
(optional)
Directions
Prep time: 10 minutes
Cook time: 20 minutes

Remove casings from sausage and place sausage in a large pot. Break into bite-size pieces with a wooden spoon and cook over medium-high heat, stirring often, for 5 minutes. Add onion and fennel; cook for 5 to 10 minutes or until vegetables are very soft and meat is cooked through. Add tomatoes and seasoning; cook for 5 minutes. Add beans and cook for 5 minutes more. Serve with Parmesan cheese, if desired.

Makes 6 to 8 servings.

I have made this about 14 times. We all love it, although I do add 2 extra cans of the diced tomatoes. I am making it right now!!!!!!!!
