Apple and Honey Topped Yams
Apple and Honey Topped Yams
4 small yams or sweet potatoes (about 2 lb.)
2 tbsp. butter
2 medium green apples peeled, cored and diced
1/2 cup honey
1 tsp. cinnamon
2 tbsp. Diamond Glazed Walnuts or Pecans chopped (optional)
Prep time: 10 minutes
Cook time: 9 to 12 minutes

Wash yams and pierce with a knife. Place on a microwave-safe plate and microwave on HIGH for 9 to 12 minutes or until soft when gently squeezed. Meanwhile, melt butter in a small skillet. Add apples and cook for 5 minutes or until softened. Stir in honey and cinnamon; cook, stirring frequently, for a few minutes until hot and bubbly. Slit the tops of the yams and fluff the insides with a fork. Spoon equal amounts of the apple mixture over the top of each and sprinkle with nuts, if desired.

Makes 4 servings.
