Sweet Yam Biscuits

Sweet Yam Biscuits
2 cups flour
1/2 cup brown sugar
4 tsp. baking powder
1/4 tsp. salt
1/2 cup butter
1 cup cooked and mashed yams (not sweet potatoes!)
1/2 cup pecans, chopped and lightly toasted
1 to 2 tbsp. milk

Prep: 10 minutes, Cook: 10 to 15 minutes, Makes: 12 biscuits

1. Preheat oven to 425°F. In a medium bowl, stir together flour, brown sugar, baking powder and salt. Cut in butter with a pastry blender or 2 forks until crumbly.

2. Stir in yams, pecans and enough milk to make a stiff dough. Roll out on a lightly floured board and cut into desired shapes.

3. Place on a lightly greased baking sheet and bake for 10 to 15 minutes or until cooked through and lightly browned on top. Serve warm with butter.
