Fat-Free Molasses Cookies
Fat-Free Molasses Cookies
Ingredients
These soft, chewy cookies have no fat (if made with egg whites) but are full of sweet flavor! Molasses is also a source of iron.
1 cup raisins
1/3 cup hot coffee
1 cup sugar
1/4 cup molasses
2 egg whites or 1 egg
2-1/4 cups flour
2 tsp. baking soda
1 tsp. each: cinnamon and ginger ground
1/2 tsp. cloves ground
1/4 tsp. salt
1/4 cup sugar
Directions
Prep time: 15 minutes
Chill time: 2 to 3 hours
Cook time: 8 to 12 minutes

Puree raisins and coffee in a blender or food
processor. Transfer to a large bowl and stir in 1
cup sugar, molasses and egg whites. Stir in
remaining ingredients except 1/4 cup sugar; mix
well. Cover and refrigerate for 2 to 3 hours for
easier handling. Preheat oven to 350°F. Shape
dough into tablespoon-size balls and roll in 1/4
cup sugar. Place 2 inches apart on ungreased
cookie sheets. Bake for 8 to 12 minutes or until set,
but still soft in the center. Cool for 1 minute, then
remove from cookie sheets and let cool
completely on a baking rack.

Makes 30 cookies.
