Golden Sour Cream and Chive Potatoes
Golden Sour Cream and Chive Potatoes
3 lb. Yukon Gold potatoes unpeeled
6 tbsp. butter
3 cloves garlic minced
1/2 cup sour cream
1/4 cup milk
1/4 cup fresh chives (about 2 bunches) chopped
1-1/2 tsp. salt to taste
pepper Freshly ground
Prep time: 15 minutes
Cook time: 15 to 20 minutes

Cut potatoes into 1-inch chunks and cook in boiling water for 15 to 20 minutes or until tender. Drain well and mash. Meanwhile, melt butter in a small saucepan. Add garlic and simmer over low heat for 1 minute. Pour over potatoes and stir in remaining ingredients.

Makes 8 servings.

MAKE-AHEAD TIP: Potatoes may be made ahead of time and reheated in the microwave.
