Old Fashioned Rolled Christmas Cookies
Old Fashioned Rolled Christmas Cookies
1 cup butter
1 1/2 cups powdered sugar
4 ea egg yolks
1 tsp. vanilla extract
1/2 tsp. lemon zest (optional)
2 1/2 cups flour
1 tsp. baking powder
1/2 tsp. salt
Royal Icing (recipe follows)
Preheat oven to 425°F and line 2 baking sheets with parchment paper. Cream butter and sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy. Add egg yolks, vanilla and lemon zest, then stir in remaining ingredients. Roll out on a lightly floured board to 1/4-inch thickness. Cut into desired shapes and place on prepared baking sheets. Bake for 6 to 8 minutes or until cookies are set but not browned. Transfer to racks to cool before decorating.

Makes about 3 dozen cookies.

Royal Icing: Combine 3 cups powdered sugar, 3 tbsp. Deb El Just Whites 100% Dried Egg Whites, 1/4 cup warm water and 1/2 tsp. lemon extract in the bowl of an electric mixer. Beat on high speed for about 1 minute or until very glossy. If necessary, add more water or powdered sugar to obtain the right consistency for spreading and piping.

Fluffy Snow: Place about 1/2 cup granulated sugar in a small bowl. Sprinkle with a little water and stir with a spoon until mixture is fluffy and looks like snow.
