Rustic Italian Stuffing
Rustic Italian Stuffing
Ingredients
6 slices whole grain bread cubed
2 tbsp. extra virgin olive oil
1 small onion chopped
1 small bulb fennel quartered and thinly sliced
1 link Tofurky Italian Sausage with Sun-Dried Tomatoes and Basil
2 small stalks celery chopped
2 tsp. Simply Organic Basil
1 tsp. each: Simply Organic Garlic Powder and Simply Organic Sage
2 cups Imagine Vegetable Broth
Sea salt and pepper to taste
Directions
Prep time: 20 minutes, Cook time: about 1 hour

Preheat oven to 350°F and place bread cubes on a baking sheet. Cook for 15 minutes or until bread is toasted; set aside. Meanwhile, heat oil in a large skillet. Add onion and fennel and cook over medium heat, stirring frequently, for 15 minutes. Tear sausage into small pieces and add to skillet with celery and seasonings; cook for 5 minutes more. Mix bread cubes, vegetable mixture and broth in a large bowl, tossing lightly until broth is absorbed by bread. Season to taste with salt and pepper and spoon into a 9-inch baking dish coated with olive oil cooking spray; bake for 30 minutes.

Makes 8 servings. Recipe may be doubled.

This recipe is soooooo delicious. My non-vegetarian family members love it and I've used this recipe every Thanksgiving since I first tried it several years ago.
