Mexi Smashed Potatoes

Mexi Smashed Potatoes
2 lb. organic golden potatoes
6 oz. Soyrizo Meatless Soy Chorizo (from a 12- oz. package)
1 (4- oz.) can green chiles diced
1/4 cup Pacific Vegetable Broth
1/2 tsp. garlic salt, or to taste
Prep time: 10 minutes, Cook time: about 15 minutes

Scrub potatoes and place in a large microwave-safe bowl. Do NOT pierce potatoes. Cover with plastic wrap with a small slit in the top. Microwave on HIGH for 15 minutes. Let stand for 5 minutes, then, leaving potatoes in the same bowl, mash until fairly smooth. Stir remaining ingredients into hot potatoes. Microwave for 1 to 2 minutes more or until very hot.

Makes 8 servings. Recipe may be doubled.

Served on 8/8/09. Doesn't look good, doesn't taste like much of anything, very disappointing recipe. Would not make again - I threw out the rest.
