Curried Chicken Skewers

Curried Chicken Skewers
1 lb. Raley's boneless, skinless chicken breasts
20 (8 -inch) bamboo skewers, soaked in water
Salt and freshly ground pepper to taste
2/3 cup honey
3 tbsp. lime juice
2 tsp. curry powder
1/2 to 1 tsp. crushed red pepper flakes
Snipped fresh chives

Prep: 20 minutes, Cook: 10 minutes, Makes: 20 skewers

1. Cut chicken into small flat strips. Thread strips onto the tops of bamboo skewers to form small portions (about 2 bites each). Season with salt and pepper.

2. Stir together honey, lime juice, curry and red pepper in a small bowl; set aside about 1/4 cup mixture.

3. Grill or broil skewers for 4 to 5 minutes on each side or until lightly charred, brushing with the larger amount of honey mixture several times during grilling.

4. Remove from grill and place on a platter; drizzle with reserved honey mixture and sprinkle with chives.
